They started<br \/>\nAlt Farm with their own 3D printer with bio-reacting nozzle and will continue<br \/>\nto work on biochemical engineering research and collaborate with the Hong Kong<br \/>\nUniversity of Science and Technology (HKUST) to incorporate 3D food printing<br \/>\ntechnology for other traditional food with the support from <i>Prof. Marshal Liu, Associate Professor of<br \/>\nEngineering Education of the Hong Kong University of Science and Technology<\/i>. <\/p>\n<p>\u00a0<\/p>\n<p>With its first patent granted on December 28, 2021,<br \/>\nAlt Farm specializes in carrying out specific enzymatic reaction in the nozzle<br \/>\nto generate the fibrous texture of foods. On top of the traditional 3D food<br \/>\nprinting on altering temperature profile, the patent nozzle could facilitate<br \/>\nchain aggregation and gelation to mimic different kinds of food in constructing<br \/>\ndifferent 3D structure. Their target is to mimic fibrous structure in food with<br \/>\nthe help of economical scaled 3D printing technologies, and this would be<br \/>\nachieved with the help of the HKUST Bioengineering team.<\/p>\n<p>\u00a0<\/p>\n<p>Many countries see\u00a0rising demand for plant-based<br \/>\nor vegan meat alternatives\u00a0for health and sustainability concerns.<br \/>\nAccording to a\u00a0<a href=\"https:\/\/cleantechnica.com\/2021\/09\/09\/plant-based-foods-are-on-my-favorite-restaurant-menu\/\" target=\"_blank\" rel=\"sponsored noopener noreferrer\">Gallup<\/a>\u00a0study<sup>[1],<\/sup><br \/>\n41 percent of Americans have tried plant-based meats and 60 percent of those<br \/>\nrespondents say they were likely to continue eating them. Growing consumer<br \/>\nawareness about the harmful effects of traditional meat production has led Alt<br \/>\nFarm to explore sustainable ways to produce meat without causing harm to<br \/>\nanimals and the environment.
