According to Euromonitor International&#8217;s report&#13;<br \/>\nentitled &#8220;Voice of the Consumer: Health and Nutritional Survey (fielded&#13;<br \/>\nJanuary\/February 2021)&#8221;, 23% of global consumers want to reduce their meat&#13;<br \/>\nconsumption and 16% are aiming for a plant-based diet. This has in turn spurred&#13;<br \/>\ndemand for meatless food options. The innovation makes plant-based ingredients taste just&#13;<br \/>\nlike meat.<\/p>\n<p>\u00a0<\/p>\n<p>Traditionally, low-moisture extrusion is used to texturise protein into&#13;<br \/>\nmeat analogue. For MEAT ZERO future product development, the high-moisture meat&#13;<br \/>\nanalogue process is used to texturise vegetable proteins into a product with a&#13;<br \/>\nfibrous texture akin to animal meat. The appearances, mouthfeel and texture of&#13;<br \/>\nthe products are similar to those of real meat. They are of equal nutritional&#13;<br \/>\nvalue.
